Acapulco Salad

1 Head   butter lettuce

3/4  cup Watercress

1/4  cup onions chopped

2   Avocados sliced

Juice of 1/2 lemon

2 cups Chicken  cooked, cold, and cubed

1 Tomato,  diced

3/4  cup  Cheddar cheese,  shredded

6  slices Bacon, cooked and crumbled

2 Eggs cooked, quartered

Mariachi dressing

3/4  cup Olive oil

1/3  cup  Balsamic or red wine vinegar

2 tb Lime juice or lemon juice

2 Cloves   garlic minced

1/2  ts  Salt

1/2  ts  Pepper

1 ts Dijon mustard

1/2  ts  Worcestershire sauce


In large salad bowl, toss salad and onion together. Cut avocados and squeeze lemon juice over slices.  Arrange avocado slices on salad around edge of bowl.  Combine chicken, tomato and cheese and place in center.  Garnish with bacon and eggs.  Serve with dressing. For the dressing, combine all the ingredients and shake well to blend.  Chill before serving.
